There are some foods that just scream for a good home deep fryer to make them taste the way they do when we buy them at various eating establishments (chicken and French fries come immediately to mind). Having shopped for a deep fryer more than once, I can tell you that there are some features you definitely want.

1. Removable oil insert with a cover. If you have ever tried to clean a deep fryer that doesn’t have this feature, you know how hard it is to keep the electrical parts dry. A cover with this insert lets you store the oil in the refrigerator for another use.
2. Timer: experienced cooks may not need this, but if your kitchen gets busy its easy to forget about food that’s merrily bubbling away without you. The time keeps you from over cooking the food.
3. Temperature adjustment: A good fryer has different settings for different foods, and a signal that let’s you know when the right temperature has been reached. This is critical with edibles like tempura if you want them to taste right.
4. Size appropriateness: Get a fryer that serves your family and perhaps a few guests. More than that requires a lot of oil and a lot of countertop real estate space
5. Budget friendly: Look at systems that offer as many of the features desired as possible within a reasonable cost factor.
6. Safety features: Find out if the exterior of the fryer stays cool when cooking. Look for sturdy handles, some type of guard against oil spattering, and a plug that easily reaches outlets.

Other useful features but ones that aren’t complete necessities include a viewing window, a filter, wattage of about 1500, and a food separator. The viewing window let’s you keep an eye on more sensitive items while cooking without opening the top of the fryer. A filter keeps your kitchen air from smelling like oil. The 1500 watt models (or thereabouts) makes about 6 servings if you’re feeding a family (otherwise you can go to 900 watts for just two people). Finally, the food separator will let you make two different types of deep fried foods at one time without mingling the oils or flavors.
