If you’ve invested in a good set of kitchen cutlery already, then there’s no question that getting a good knife sharpener should be on your “to do” list. Cutlery isn’t cheap, and a sharpener hones, files, and removes burrs from your knives without damage so they cut better for many years to come.

There are several types of sharpening systems from which to choose. The most traditional approach is a sharpening stone, often made of Whetstone or Carborundum against which the blade is pressed in a smooth stroking motion. There are also sharpening steels with a surface against which the knife moves in an arc to grind it. Both of these methods are fine for both straight and serrated blades.

Electric models don’t require as much personal interaction, but they don’t give you fine control like a sharpening stone of steel. These models have grinding wheels typically made from aluminum oxide that turn and rub against the knife to remove rough edges.

The spinning surface of an electric sharpener can be harsh and isn’t suited for all knives. Rather, this system might be best for “everyday” knives that benefit from being sharper, but won’t be missed if they chip.
